Caprese, so simply delicious and understated. Is there any easier appetizer in the world? I think not. We can almost not even call it a recipe! This little doozy is great for a laid back girls night, unexpected company, a no-frills date night, a quick appetizer for a large group, you name it!
Since Spring is around the corner I thought it would be the perfect time to showcase one of my favorite fresh herbs, Basil. Did you know that 60 different forms of Basil have been identified? But for our purposes, we will be talking about the classic sweet basil most of us are familiar with. Besides being absolutely delicious, basil has antibacterial properties and it’s volatile oils have a wealth of health benefits. Basil aids in fighting inflammation within your body and can help with conditions such as rheumatoid arthritis. Basil is also a good source of Vitamin A and magnesium.
If you are not interested in growing your own Basil, make sure to buy fresh basil in the store that has deep green leaves and free of dark spots or yellowing.
Our next ingredient would be fresh mozzarella. I have yet to try and make my own, but it has always been something I have wanted to try! (Maybe a later post) Luckily, we have some great cheesemongers here in the midwest that we can purchase local cheese from, in the mean time.
Our last ingredient, the tomato. Now, tomatoes are in season more toward the summer months and yes local is always going to taste better, but sometimes the perfect appetizer just can’t wait. A fresh tomato with just a sprinkling of sea salt and you can just stop there. But, a fresh tomato with fresh mozzarella and fresh basil…I.can’t.even. Last but not least, a nice drizzle of good Extra Virgin Olive Oil to bring it all together.

- 4 Medium-Large Sized Red Tomatoes(should make 10 1/2 inch slices)
- 2 Fresh Mozzarella Balls
- 10 large leaves of fresh basil
- Sea Salt
- Extra Virgin Olive Oil
- Slice tomatoes roughly a 1/2 an inch thick, place on a platter and sprinkle with sea salt.
- Slice mozzarella roughly the same size until you have 10 slices. Place on top of the tomato slices.
- Place Basil leaves on top of the mozzarella and drizzle each stack with EVOO.
